Well, at least the billboard of Dr. TJ Eckleburg will look very dramatic! Aside from that, I don't get what the point of 3D for this movie is either, but it's being directed by Baz Luhrmann, who does favor bright, eye-popping visuals. I'm sure if it had been in vogue at the time, he would have filmed Moulin Rouge in 3D, just to have a scene with Nicole Kidman floating above the audience on a trapeze in her big entrance.
(I chose Buffy's atomic green dress as an icon, in honor of Gatsby's green light at the end of the dock.)

Ha! Nice!
I am not a fan of 3D in general. The only time I have ever felt like it added to a movie is at amusement parks when the movie lasts for ten minutes tops and it's really all about that pie being flung at your face (yes, I am specifically thinking of the Muppet movie at Disney World). 3D makes everything look dark and murky and I am just not a fan. And even if I was, I still don't think it would be necessary for The Great Gatsby. I just do not understand.
I was going to say it's just Baz Luhrmann, too. He may not be doing what he calls his "Red Curtain Cinema" as he did with Strictly Ballroom, Romeo+Juliet and Moulin Rouge, but he's still a dynamically visual director so 3D might appeal to him on a creative level.
I don't have a symbolic icon, so here's Miss Piggy.
