Yeah, no matter what anyone says about "Dawn's Early Light" (and don't get me wrong, the scene where Simon gets his pompous-ness on and convinces that guy not to kill Jayne is awesome), I think the betting moment was the real moment when Simon and Jayne's relationship took a turn for the better.
