(no subject)

I got too much Buffalo mozzarella at the grocery store last week and I need to use it up before it goes bad. Does anyone have a good recipe that I can make for lunches next week that uses quite a bit of mozzarella?

I've got a vegetable lasagna one I might do, but I'd like another option!

I sometimes use my leftover mozzarella as filling for empanadas. I just add onion, or tomatoes, or mushrooms, or olives, or corn, or basil... anything that goes well with cheese! I prefer this shape of empanada for mozzarella, because it doesn't overflow so easily. And you can make a bunch and freeze them and eat them later!
