(Here via network!) Your review of Wandering Stars made me think of Jews vs Aliens -- being more recent it might work better for you? When I was looking up the link I saw this review of Jews vs Aliens, by someone who was similarly unimpressed by Wandering Stars. I know the editors did another anthology on the theme of Jews vs Zombies too.
